While I’m home with our new baby, I have had a chance to do more home cooking that usual…but had to get creative with the ingredients we have on hand, as baby Ernie isn’t ready for the grocery store yet! Luckily there are lots of yummy things you can make with a few fresh ingredients, the condiments in your fridge, and some creativity!

This recipe for grilled shrimp has some brightness from the herbs, a little bit of spice from the sambal, and just the right sweetness from the preserves…which I think were left over from my dad’s last visit ;D

½ cup packed basil, rough chopped

½ cup mint, rough chopped

4 cloves garlic, rough minced

1 T sambal

2 T Dijon

2 T fish sauce

3 T apricot preserves (or any other)

1 cup rice bran or canola oil

2# 16-20 shrimp, peeled and deveined, tail on

Puree all but the shrimp in the blender until combined. Toss it on the shrimp and let it sit for 30 minutes or so. Then just throw them on the grill and your done!

Mix a tablespoon into a soft stick of butter with some cheddar cheese and spread on baguette. Bake for a super tasty garlic bread!
