Found some great tender collards that cook in just a couple minutes! Add some sesame and horseradish and the pork chops are very happy;)
Sesame Horseradish Marinade
Yield: 1 cup
1/3 cup Prepared Horseradish
1 Tbsp Hoisin
3 Tbsp Soy Sauce
2 Tbsp Sherry Vinegar
1 ½ Tbsp Sesame Oil
2 Tbsp Rice Bran
Blend until pureed and smooth.
Marinated Pork Chops with Sautéed Collard Greens
1 lb thinly sliced, boneless pork chops or 4 thin pieces
1 recipe Sesame Horseradish Marinade
1 bunch Small Collard Greens, ribbed and cut in to
½ cup Sweet Onion, sliced
Pour ½ cup marinade over pork chops. Allow to soak for 15 minutes.
While pork marinates heat a sauté pan over medium-high heat. Add a small amount of oil to the pan and sweat onions for 2 minutes. Add collard greens over onions and toss to mix. Salt the entire pan to begin to break down the greens. Allow veggies to sauté for 10 minutes, tossing regularly. Drizzle ¼ cup of sesame marinade into pan, toss to coat and cook for another 2 minutes.
Season pork on both sides with salt
Heat a separate pan over medium heat. Add a splash of oil and sear pork to a caramelized golden brown, about 4 minutes on either side. Remove from heat and allow to rest for a few minutes.
Plate pork and cooked greens together for a super tasty easy meal!
