Who said jam was reserved for grapes and strawberries?! Mix it up with some plums and apricots, plus the sweet onions give this jam a deeper flavor!

Perfect on a flaky croissant or morning toast 😀

1 lbs  Plums, pitted and sliced

1/2 lb Apricots, pitted and sliced

1/2 cup Sweet Onions, small diced

1/3 cup Sugar

1/2 tsp Salt

1 Tbsp Fresh Ginger, minced

1 Tbsp Tarragon, rough chopped

1 Tbsp Fresh Lemon Juice

Sweat onions in a small amount oil until tender and translucent. Add fruit, ginger, lemon juice, sugar and salt. Cook down for at least a half hour, until fruit is well broken up and sauce is thick. Turn off heat and add fresh tarragon. Allow to cool fully before using.
