for the blue cheese maple syrup
1 cup real maple syrup
2 T blue cheese – I used Carr Valley
1/3 c grapefruit juice
1/8 t salt
pinch of pepper
for the batter
3 eggs
1/2 cup half and half
2 T dark brown sugar
1/8 t salt
1/8 t vanilla extract
Pinch of pepper
for the toast
3 T butter
8 slices baguette – sliced on a bias
For the syrup
Put all ingredients into a pot to simmer on low heat, whisking as you go. The cheese will leave little spots, but that is okay!
For the batter
Whisk it all together!
Soak the baguette in the batter for a couple of minutes, giving it a little squeeze so it soaks up some batter. In a few rounds, using a tablespoon of butter each time, cook the baguette over medium heat. Cook on each side for 2 minutes until its nice and golden brown.
To serve, drizzle with syrup and top with the grapefruit segments. Can leave the syrup on the side if the french toast is going to sit for a little bit, to prevent from getting soggy.
