Crunchy, sweet, salty, tasty – this caramel corn and nuts is perfect to put out and your Super Bowl or other gathering. If you have any leftover chop it up and out it over your ice cream – it’s delicious! Can be made a few days in advance.

 

9-10 cups popped popcorn *

2 cups cashews

2 cups sugar

2 Tablespoons butter

1 teaspoon salt

 

Make dry caramel. Heat a large pot over high heat, until almost smoking. Put in one cup of sugar and let it begin to melt. Whisk rapidly so it evenly melts. Add in other cup of sugar, and whisk rapidly to combine. Then add in butter, and allow it to melt. Mix until fully incorporated.

 

Fold in peanuts and popcorn until completely coated. Turn on to parchment lined sheet pan and pull apart into small chunks.

 

1 cup unpopped popcorn

1/2 cup oil

2 Tablespoon salt
