I am not really sure how donuts became tied to Mardis Gras, but from Paczkis to biegnets, Fat Tuesday is a day known for it’s fried bread!
Here is a quick recipe for making your own little donuts at home!
Makes 18 donuts
0.0625 oz dry yeast
1 tbl warm water
3 floz lukewarm milk
1/8 cup sugar
1/4 teaspoon salt
1/2 eggs
2 tsp lard
1 ¼ cup all-purpose flour
- Mix yeast and water
- In a mixer with a dough hook, combine yeast and water mixture with milk, sugar, salt, eggs, lard and half the flour
- When most of the flour is mixed in, slowly add the rest of the flour
- Mix until it pulls away from the bowl
- Let it proof at room temperature for 10 minutes in a lightly oiled bowl
- Then proof in a cooler at least 2 hours until it’s doubled in size
- Roll out dough on a floured surface to about ½ an inch thickness
- Cut to desired size (an inch and a half by an inch and a half is standard size)
- Fry and toss in sugar
Ganache
- 9 oz dark chocolate
- 2 oz milk chocolate
- 7.5 oz heavy cream
- 3.5 oz condensed milk (add after pouring cream)
- 2 tbl sugar
- 1/3 tsp salt
- 1 tbsp coffee
- 1/3 teaspoon yuzu
Chop dark and milk chocolate and place in medium sized bowl
Heat the cream, sugar and coffee
Pour mixture over chopped chocolate and let it sit until melted
Add the salt, yuzu, and condensed milk
Stir with whisk to combine
Transfer ganache to a piping bag, and pipe into cooked donuts
