leeks are a vegetable that i just love to be kept simple…. melted slowly in some butter to let the sweetness come through. the addition of the rub gives a hint of cheese like a lighter version of leeks gratin.
great on its own or served under fish or chicken!

yield: 4 servings

6 large leeks, dark green ends removed
4 tbsp butter
3 tsp rub #3
salt to taste

  • cut leeks into round ¼ inch thick slices.
  • place rings in a bowl of cold water and agitate to remove any excess sand. place on a paper towel and allow dry.
  • in a sauté pan, melt butter over low heat. add leeks and slowly cook until they are soft and wilted, about 15 minutes.
  • season with rub #3 and salt lightly.
  • allow to cook for a few more minutes.
  • serve warm.

if you want to add a little extra texture (which i usually do) try these simple spiced fried leeks. they are pretty much good on top of anything 😉

crispy leeks with rub #3
yield: 2 cups

2 large leeks
2 cups canola oil
1 tsp rub #3

  • cut leeks down the middle, width-wise, so you have 4 segments approximately 3 inches long.
  • cut those segments in half, length-wise, leaving you 8 pieces that can be laid flat and thinly-julienned. place the thin slices in a bowl of cold water to rinse off any sand. place on a paper towel and dry thoroughly.
  • add oil to a saucepot over medium heat.
  • carefully add leeks and fry for 3-5 minutes, until just golden brown.
  • remove from oil and place in paper towel lined bowl. while leeks are still hot season, with rub and a pinch of salt.

use as a garnish to melted leeks or any of your favorite dishes!
