at little goat, we are OPEN for brunch on christmas eve, until 3pm!

and speaking of brunch… below are some recipes that are great for christmas morning 🙂

caramelized onion frittata DSC_4193
yield: 4 servings

8 eggs
½ sweet onion, julienned
1 tbsp butter
½ cup cream
1 ½ tsp salt
2 tbsp goat cheese
2 tbsp parmesan cheese

in a 6-8 inch non-stick sauté pan add butter and onions. slowly sweat onions until they begin to caramelize. allow to cook to a medium golden brown. once desired color is reach, remove from heat and allow pan and onions to cool.

in a medium bowl whisk together eggs, cream and salt. pour over onions into cool sauté pan. crumble all of the goat cheese and sprinkle half of the parmesan cheese into the egg mix.

place pan in a 350 degree oven for 15 minutes, or until the eggs do not wiggle when agitated. turn eggs out onto a platter, sprinkle with remaining parmesan and slice into eight slices.

serve with a baby green salad that includes your favorite herbs!

 

broccoli cheddar frittata
yield: 4 servings

8 eggs
1 ½ cups broccoli, chopped
1/3 cup cheddar cheese, shredded
1 tbsp butter
½ cup cream
1 ½ tsp salt

in a 6-8 inch non-stick sauté pan add butter and broccoli. slowly cook broccoli until just soft. allow broccoli to cool in pan.

in a medium bowl whisk together eggs, cream and salt. pour over broccoli into cool sauté pan. sprinkle the top with cheddar cheese.

place pan in a 350 degree oven for 20 minutes, or until the eggs do not wiggle when agitated. turn eggs out onto a platter, sprinkle with remaining parmesan and slice into eight slices.

serve with a baby green salad that includes your favorite herbs!
